These roasted carrots are combined with saffron and a lot of roasted sesame seeds. These intense flavours go well together, and so the simple dish becomes something special.
Another plus point: the carrots taste both warm and cold.
Ingredients For FRIED CARROTS WITH SAFFRON AND SESAME
- 500 g carrots
- 50 g sesame
- 1/2 lemon
- 1 tbsp maple syrup
- One knife tip Saffron
- olive oil
Peel or clean the carrots according to taste. Smaller carrots can be left whole, larger ones halved or quartered lengthways. Place in a pan and pour generously over olive oil. Sauté on medium heat for about 15 minutes, until cooked but still have a bite.
In the meantime, pour a small sip of hot water over the saffron threads – this way the aroma will develop better. Roast the sesame in another pan without fat until it starts to smell good and takes on some colour. As soon as the carrots are ready, squeeze the lemon over them. Add maple syrup and saffron. Salt a little and mix everything. Finally, sprinkle the sesame seeds over the carrots.
